Kale chips. I marinated the kale with olive oil and Italian spice. Then I put the kale in the oven after baking bread using the left over heat. Great way to make a healthy crunchy snack!
Multi vegi coleslaw! I mixed purple cabbage, carrots, celery, walnuts and dried cranberries and seasoned it with olive oil, salt and pepper.
Carrot lentil salad! Red lentil is a good source of protein. I mixed lentils, and shaved carrots, then flavoured them simply with olive oil, vinegar and salt! I plated it on some avocado to contrast the colour!
I mixed corn, parsely and dried red onions into my natural yeast bread! It's a healthy way to start your day!
